Walnut Fudge Cake

Ingredients:
8 eggs, separated
1 & 1/2 c. confectioners' sugar
1 c. unsalted butter, softened
2 c. walnuts, finely chopped
6 sq. semi-sweet chocolate, melted
3 tbsp. flour
1 & 1/2 tsp. vanilla

Directions:
1. Preheat oven to 325 degrees F. Grease and flour 3 (9 inch) pans. 2. In large bowl with mixer at high speed, beat egg whites until soft peak forms; beating at high speed sprinkle in 1/2 cup sugar,
2 tablespoons at a time. Beat until sugar is dissolved and whites are stiff.
3. In another bowl, at low speed, mix yolks well, remaining sugar, butter, nuts, chocolate, flour and vanilla - constantly scraping bowl with rubber spatula, gently fold in egg whites until just blended.
4. Pour batter in 3 pans.
Bake 35 minutes until toothpick is clean.
Cool 10 minutes.
CHOCOLATE FILLING:
In double boiler, over hot (NOT BOILING) water, melt 2 squares semi- sweet chocolate.
Stir: 2 c. walnuts, chopped
1/2 c. milk
Cook over boiling water for 5 minutes, until sugar is dissolved.
Remove from heat.
With spoon beat in: 1 tsp. vanilla Refrigerate until cool. Spread between layers.
GLAZE:
In double boiler over hot, NOT BOILING, water,
melt: 2 tbsp. shortening Remove from heat.
add 3 tbsp. milk Beat in until smooth.
Spread while still warm. AMEN!!!
