WAIKIKI MEATBALLS
Ingredients:
1 1/2 lb. beef
2/3 cup cracker crumbs
1/3 cup minced onions
1 egg
1 1/2 tsp. salt
1/4 tsp. ginger
1/4 cup milk
1 Tbs. olive oil
2 Tbs. cornstarch
1/2 cup brown sugar (packed)
1 can (13 1/2 ounces) pineapple tidbits, drained (reserve syrup)
1/3 cup vinegar
1 Tbs. soy sauce
1/3 cup chopped green pepper
Directions:
Mix thoroughly beef, crumbs, onion, egg, salt, ginger and milk. Shape mixture by rounded tablespoonful's into meat balls. In large skillet pour olive oil into pan and heat. Place meatballs in skillet and cook done.
Sauce:
Mix cornstarch, sugar, reserved pineapple syrup, vinegar and soy sauce together until smooth. Pour into skillet, cook over medium heat stirring constantly until mixture thickens and boils. Keep stirring boiling mixture about 1 minute then add green peppers and pineapple tidbits.
Now you are ready to serve it.
