BREAD PUDDING #3
Serves 4
Ingredients:
9 oz milk
9 oz double cream
3 fresh vanilla beans, open faced
salt to taste
5 eggs
5 oz sugar
1 Loaf of White bread
3 oz butter
1 oz raisins soaked in water
1 tsp. Cinnamon
Directions:
Bring the milk, cream, butter, salt and vanilla beans to a boil. Mix eggs and sugar together, add simmering milk mixture and pass through a sieve. Cut the bread into thin slices. Arrange bread layers in an oven proof buttered dish. Put the soaked raisins between the layers of bread and cover with the milk mixture. Place the oven proof dish in a pan with 3/4 cup of water to provide some moisture for the baking and to keep the pudding from sticking. Bake at a moderate heat for 40-45 minutes, till golden brown. Serve with Vanilla sauce.
Hint I make my vanilla sauce by using a vanilla pudding mixture (Cook And Serve type from the grocery) and just add more liquid than the pudding calls for.
Joe says to use some of the vanilla sauce to help fill the dish if the milk sugar and eggs mixture is not enough to completely moisten the bread.
